Recognizing a good Coffee
Highland Coffee. Arabica coffee is cultivable
in areas near the equator in altitudes between 600 m and 1200 m
over the sea level. The benefit of the coffee plants is directly
influenced by the environmental conditions (temperature, sunshine,
rain, wind, soil, etc.).
Coffees grown at high altitudes have an outstanding quality due
to the very special growing conditions of these regions, providing
an ideal level of acidity and therefore an exclusive taste.
Pure Origin Coffee. Each pure (or single) origin
coffee has its own and unique characteristics resulting from the
specific environmental conditions of the region in which it was
grown. These unique characteristics make the pure origins to very
special coffees, each of them containing its original taste that
won’t be found in any other coffee.
Handpicked Coffee. The best quality of a coffee
is reached by processing only ripe fruits. As machines are not capable
of picking exclusively the ripe fruits, the sole method to reach
the best quality is picking the fruits by hand. This pre-selection
allows avoiding strange, contaminant flavours and aromas in the
coffee, caused by overripe or unripe fruits.
A content of just 2.5% of green (unripe) fruits already has an important
impact on the quality of the coffee.
Washed Coffee. Washed Arabica is classified as
a coffee of higher quality. The wet processing method allows a better
preservation of the essential qualities of the coffee beans, resulting
in a homogeneous green coffee with a very low rate of defective
beans.
